Ingredients

  • 2 cups (500 ml) 10% cream
  • 2 cups (500 ml) of milk

Hot chocolate with spices

Ingredients

  • 1 cinnamon stick, broken into pieces
  • 4 star anise
  • A few peppercorns
  • 1/4 tsp. 1/2 tsp (1.25 ml) ground cardamom
  • 1/4 tsp. 1/2 tsp (1.25 ml) Espelette pepper
  • 1 c. (15 ml) sugar
  • 2 c. (30 ml) cocoa
  • 1/4 tsp. (1.25 ml) spice blend (see recipe)
  • 2 cups (500 ml) of milk
  • 1/2 vanilla pod, split and scraped
  • 125 g of72% dark chocolate or a large cup of pastilles

Preparation

  • In a coffee grinder, grind the cinnamon, anise stars and pepper.
  • In a small bowl, combine the ground spices, cardamom and Espelette pepper.
  • In a small bowl, combine sugar, cocoa and spices.
  • In a saucepan, bring the milk, cocoa mixture and vanilla to a boil, whisking everything together.
  • Remove from heat and stir in chocolate.
  • Using the whisk, stir well until smooth.
  • Strain the hot chocolate through a sieve before serving.

  • 1 c. orange zest to garnish

  • Simmer the cream and milk over medium-high heat.
  • Add chocolate.
  • Add orange essence.
  • Shuffle untilchocolate pieces are melted.
  • Pour into cups, sprinkle with orange zest and serve immediately.
