Making homemade popsicles

I like to cook our homemade popsicles and all my recipes (or almost) are made with fruits and vegetables and have very little added sugar. Thus, it allows me to better control what my children eat as treats and to be a lot more flexible when they ask me for another 4e!

Vegetables in my popsicles?

Yes, yes! And I swear it goes incognito when you have the right tools to make vegetables smooth. Plus, I find adding veggies to homemade popsicles is a great way to get some extra vitamins in too!

Method to assemble rainbow popsicles

First, make my 5 smoothie recipes in a high performance blender (I couldn't live without my Vitamix!)

Store each mixture in Mason jars.

Carefully put eachsmoothie in a popsicle mold according to the order of the colors of the rainbow. Well, I didn't use blue, but if you want to try, use food coloring for more success!

Use a funnel or spoon to pour the smoothie mixture into the mold. The floors will mix up a bit and that's normal!

Once the molds are filled, add the sticks and freeze the popsicles overnight.

To make the popsicles come off the mold, fill your kitchen sink with room temperature water. Place the mold in the water for a few seconds, making sure the water does not exceed the top.

Once all the popsicles have been removed from the mold, enjoy or pack the extras in a large ziploc bag.

Since I tried silicone molds, I can't go back. I have this version of reusable“mr Freeze” that is really handy or this new mold that I LOVE!

It's big, holds multiple popsicles, pops out easily, and washes like a charm!

Ingredients to make multicolored lollipops

PURPLE

  • ½ frozen banana
  • ¼ cup vanilla yogurt
  • ½ cup frozen berry mix (cherry, blueberry and blackberry)
  • ¼ cup water

RED

  • ½ frozen banana
  • ¼ cup vanilla yogurt
  • ¼ cup ofbeets, cooked and peeled
  • ½ cup frozen strawberries
  • ¼ cup water

ORANGE

  • ½ frozen banana
  • ¼ cup vanilla yogurt
  • ½ orange
  • 1 small carrot
  • ¼ cup water

YELLOW

  • ½ frozen banana
  • ¼ cup Greek, vanilla or plain yogurt
  • ½ cup frozen pineapple
  • ¼ cup water

GREEN

  • ½ frozen banana
  • ¼ cup Greek, vanilla or plain yogurt
  • 1 handful of spinach
  • ½ cup frozen pineapple
  • ¼ cup water
